A Fall Soup for Food Prep – perfect for the HCG Diet

Meal prep has been a game changer in my life!  Being prepared helps most of us with success in day to day life.   I know how much time it saves me in my life and allows me to have healthy, nourishing food right at my fingertips.  Showing up to your day with meals all prepped and in containers is  a simple key to success for most of my patients in their weight loss journey and beyond.  Many of my HCG Diet patients tell me that meal prep is the single most effective habit that keeps them on track with a healthy lifestyle.

CREATING A FALL SOUP FOR HCG Diet Meal Prep

Over the past few weeks, I have been on a “soup kick.”  Each Wednesday, I hit the farmers market and load up on beautiful, fresh vegetables ~ garlic, onion, parsnips, carrot, zucchini, chanterelle mushrooms, chard, spinach, broccoli, brussell sprouts, green beans, beets, etc.  For those on the HCG Diet, I would suggest to only use veggies on the HCG Diet Phase 2 food list.

For the base, you could purchase broth from Pacific foods that is low sodium and organic.  In my house, I make bone broth on occasion and keep it frozen for my soups.  I begin my soup prep by sauteeing garlic and onions in some coconut oil in my stock pot (the pot I will use to make the soup). Then, I add my bone broth and get it warmed up.

As the soup broth begins to simmer, I  wash the vegetables and chop them up into bite sizes.  I will be honest, this takes a little time, but it can be fun!  I always admire the veggies and end up feeling super grateful that they are grown on this planet to nourish us.

 Once the veggies are chopped, you can throw them into your pot with some salt, pepper and any spices you enjoy in your soups.  I bring the broth to a boil and then let it simmer on low heat for a couple hours.

When this HCG Diet Friendly Soup is all Done …

Once the soup is all done, you can enjoy a bowl and then let it cool.  Mason jars make a nice container to hold the soup in the fridge.  When I make a soup, I will usually bring 2  mason jars with  me to work each day.  I am happy to enjoy my soup heated up or cold.  The soup stays good for about a week in the fridge.  You can also put some in the freezer for a later date! If you would like, you can always add in some protein, legumes, grains or an unprocessed, organic miso for a full flavor.  

This works well on the HCG Diet by choosing HCG Diet friendly vegetable options and adding in your protein options if you desire.
