Grilled Skewers for Lunch on the HCG DIET
I am always amazed what you can do with the list of food on the HCG DIET protocol. Of course, I have evolved the program A LOT over the past 17 years and worked hard to make it easier for those living the modern-busy-lifestyle. Most people feel like the plan offers an amazing amount of variety and with a little creativity you surely do not have to be bored with your food options.
Skewers on the HCG DIET
The last few weeks, I have been grilling and skewers can be a lot of fun. You can layer different proteins and vegetables and toss them on the grill and there you can have your protein and your veggie all in one. I recently discovered this Ginger Chicken Skewer recipe and I wanted to share it with you. It makes a great lunch or dinner and can be paired nicely with a side salad of fresh greens. It takes about 25 in total to make.
- 200 g free range chicken breast cut into cubes (2 servings)
- 1/2 inch piece of ginger root finely chopped
- 2 cloves garlic finely chopped
- 1 tbsp lime juice (fresh is best)
- 1/2 tbsp Bragg’s liquid Amino’s
- 1/4 tsp stevia powder or 5 drops of liquid stevia
- 1 tsp hot sauce (Franks or Tobasco) if desired
- 2 tbsp minced coriander
- 8 mini vine ripened tomatoes
- 4 small onions peeled and cut into chunks
- 2 tbsp capers (if desired)
- Wood skewer sticks
Putting the Skewers Together for the HCG DIET or Healthy Meal
Place ginger, garlic, lime juice, Bragg’s, stevia, hot sauce and coriander in a large bowl and mix together well.
Place cubed chicken in the bowl with the marinade and mix thoroughly, ensuring chicken is well coated. Pour the contents of the bowl into a freezer bag and refrigerator for about 8 hours.
I prefer to soak the wood skewer sticks in water for about 20 minutes.
Thread chicken cubes on to each skewer. You can place a piece of onion between each one or two pieces of chicken.
Brush grill or BBQ with olive oil and heat to high temperature.
Cook for 10-12 minutes turning at about the 6 minute mark and then cook on the other side for 6 minutes.
Remove from grill and add a tomato to each end of the skewers if you desire.
Serve 2 skewers on to each plate, add salad and garnish with capers if desired.
